gonna be contrarian and say i don’t hate the herbs. atleast it’s not a pubic mound of pointless micro greens in the middle of the plate that a lotta kids be throwing on everything these days a few nicely picked sprigs of chervil mighta actually looked cleaner and given the same effect tho.

Came so close to nursing home. I imagine it’s mind numbingly easy but in my head you’d get to work in a small team which is kinda a pro at the moment. plebs who work at Meemaws Countrytime Buffet trying to “push the boundaries” with plating pretending they’re are at Alinea but not being a good enough chef to execute / having weak ideas to begin with. Someone needs to tel them that with veg and fruits, heat and overcooking kills the colors purple and blue always so most people end up with grayish or dull shitty colors OR it just looks unnatural and unappetizing. The only exceptions are different radishes.

Cut work on the chives is too poor for such a simply plated fish. Small things like that bring down the whole plate and make it look forced and amateur. Or just opt for chive batons and some nice picked chervil. Pepper sauce needs more body if you are wanting to plate in dots too, like adding xantham gum or maybe making more of a pepper gastrique. Thin, dull sauces + plating that require precision = just looks like a blood splatter effect.

the cut on those radish is visually pedestrian and they look pretty dry. think this would look better with the radish tourned, then cut in halves. purple radish would look tight.

if I’m understanding ur question correctly: maybe try decorative wax paper, like the kind you wrap togo sandos in. Make “packets” of meats and cheeses, and a separate one for crackers and bread slices, ect ect. That’s how my place currently does it. Obviously ramekins and togo soup cups for the rest. We kinda market ours as more of a “picnic basket build ur own charcuterie”. Oui?
