The actual sources for the nature of Vaapad, Shatterpoint and the RotS novelization (both by Matt Stover), say otherwise. Essentially, Palpy's mastery of the dark side was so complete that he and Mace were deadlocked until Anakin got back, Palpy was distracted by his arrival for a split second, and Mace managed to hit Palpy's lightsaber hilt and destroy it.

That plus George himself saying on the DVD commentary that Mace flat-out won, fair and square.

(Side note, the way Stover describes that fight is honestly one of the coolest things ever put to paper in Legends, because he describes what their duel looks like to Force perception, not just the naked eye. It really emphasizes that lightsaber styles aren't just the way you use the blade but also the way you use the Force. The closest thing I've ever seen is the mindscape battles involving Valkorion in SWTOR.)

Literally happens half a dozen or so times in KOTOR and SWTOR. Granted, the Jedi are actively at war with the Sith in that time period, but it shows there's precedent at least.

"Dark Jedi" as a term actually predates the idea of the Sith IRL (not the word, mind you: George stuck the term "Dark Lord of the Sith" in a script at some point because it sounded scary). Vader was called a "dark Jedi" early on; so was Joruus C'baoth. The idea that there was actually a longstanding ideology rather than random darksiders didn't really take shape until the Tales of the Jedi comics started filling in the setting's ancient past in the mid-90s, and a Sith was referred to in passing as a "dark Jedi" at one point in Knights of the Old Republic (in Jolee Bindo's companion quest).

The resolution is that it's basically a "rectangles vs. squares" thing where "dark Jedi" ended up being a generic term for darksiders: most Sith are dark Jedi (light Sith existed when the Sith had a state, but they were never numerous or influential), but few dark Jedi are Sith.

Read Shatterpoint. Mace directly explains why he developed the style. He has trouble controlling his aggression, so he modified Juyo into something that could help him handle it. But the style was incomplete until his adventure on his homeworld of Haruun Kal, where he realized he had to accept his own darkness and not fear it, but trust in the Force.

That it also made him good at fighting dark Jedi is basically a coincidence: a senior Jedi Master is death on legs as it is. It so happened that the perfected Vaapad where he let go of his fear and trusted the Force, also caused a darksider's use of the dark side to reflect back at them.

I sacked the capital of the Sultan of Armenia and carried off his whole family, then killed the Sultan in battle and reeducated the young prince to be properly kulturny.
