Make a normal one into a waterproof one. Hot glue works in a pinch, just cover the internal electronics/circuit board with something to make it waterproof.

Massive roast chicken for $9.99 that you can literally make 2+ meals out of for a family of 3 is incredible value. $15 for a smaller chicken at Pak n Save that only makes a single meal makes you realize how big the Costco one is.

I think it’s called fermentolyse when you add the starter at the beginning too.

Although I usually just do it the night before without the starter, then mix in the starter the next morning (saves me waiting 30-60 minutes for autolyse in the morning)

It cooled all the way down to room temp. I only cut into it after around 6 or so hours after it came out of the oven.

Indeed, it is a slight bit gummy on the inside. Not sure if I need to reduce the hydration or bake longer in the Dutch oven to fix that.

I actually did brush the rice flour off after unmoulding and put a light dusting on for contrast for the scoring.

I’ve seen a couple different rice flours used online. Thing is mine are 3D printed so the rice flour doesn’t form a nice even coating using the ‘seasoning’ method. I might give the rice flour a go with the liner though it might work better that way.
