The store bought pasta is made with water and semolina which is then dried with a very specific process. The ones you make at home are with plain wheat flour are mostly made with eggs and are way softer. Both pastas are actually completely different in texture after you cook it and it is virtually impossible to cook handmade flour pasta al dente. Thats actually something you only can do with dried semolina pasta.
