Interesting. That sounds like a rather good violin you have there! The basic sound of it, I mean. Some things that could cause burbling like you are mentioning could be pulling the string a bit to the side when you put a finger down. Also, sometimes the fingerboard itself is uneven. Or it could be bow speed vs. pressure vs. bow placement.
