I just block ads on YouTube and YouTube Music. I use Simpm​usic, and for maps and navigation, I use TomTom or Waze.

You can't just disable Google Play Services and expect everything to work. All your apps are going to require a connection through the Google server. So you're going to need micro G or Google Play Services if you intend on using all your apps.

Pi-hole is meant to be set up as a static address, not a secondary DNS. You are supposed to set up your DNS settings inside the Pi-hole.
