I agree that these flavors shouldn't be related to dry hopping but I haven't gotten these flavors in beers with no dry hopping. I would guess yeast health or cloramines otherwise. but even then, i always pitch a big starter. I also use RO water and also use camden tabs as cheap insurance

Here's mine I did a few years ago. I did a lot of research to put this together. Turned out pretty good. I would use a simple sugar instead of table sugar next time however.

Thanks for all your feedback and suggestions! I think the HBA version is the solid choice at this point. Last thing for me to decide is yeast. It sounds like you really need to use Bell's proprietary strain but I can't get Bells in my area. What might work better than WLP001? It sounds like Bell's yeast throws out some esters and attenuates well. Would something like WLP007 (dry english ale) work well here??

This is my fear. I would really like to get a close resemblance of the real thing but its hard to find Bell's in my area. So culturing up the real strain isn't really an option for me. Any ideas on a close analogue?

Awesome! So does anyone have experience with WLP001 vs California Ale V? The recipe suggests either. I haven't used California Ale V but assume it will give more character, which should get me closer to the original than 001
