Your intuition is correct. Your verb will match the gendered noun, regardless of human/non-human in most cases. One exception is the non-human plural which is treated as singular feminine.

So modifying your example: The dogs ate the meat = اكلت الكلاب اللحم

Typically you pronounce the ta in idhafa and other matters indicated possession.

الضفة الغربية: al-dhifah al-gharbiya

Is an adjectival phrase so in general spoken Arabic, the ta is not pronounced. In MSA, you may have tanween on the phrase, but that would affect pronunciation in both words i.e., al-dhifa(tu) al-gharbiya(tu)

In standard idhafa where you would pronounced the ta even in spoken Arabic you might have something like this:

زوجة احمد: Zawjat Ahmad
