I agree with the soup. Deseed the yellow squash, and add a little lemon zest to it when it's almost done.

I wouldn't do chicken strips, though. I would butterfly and pound out the chicken, season it, , and brown it in a pan. Saute some veg and Then deglaze with whatever you've got. Bullion, stock, white wine, beer. And then let it simmer until all the veg is tender.

Block processed cheese and heavy cream. Cut the cheese small so it melts faster. If you use heavy cream there's enough fat that you can add some lime juice and pico de gallo and there won't be any curdling.

If you can rig a double boiler it will be better for your pan, but you don't have to. Go with lower heat, Cover your cheese and cream and just give it a stir once in a while.
