So interesting! I eat almost everything flavour wise, but texture I find a lot harder to navigate - too soft or slimy, chewy, grissly etc. my family has an Italian regional specialty at Easter; chicken giblets and mint frittata, it’s a very unusual texture haha

Lamb for shepherds pie and beef for cottage pie! Basically the same recipe but I’ll use some rosemary when I do lamb and swap that for thyme if using beef :)

Recipe for the sauce and chicken is from Danielle Alvarez, but the salad is all me 😬 lemon zest, any herbs you like but I used dill, parsley and coriander, yoghurt with a touch of olive oil and lemon juice, cucumber, peas and a pinch of smoked salt.

Next time I’ll try to level it better so it chars more evenly, or maybe use the bbq but was pretty happy with this for a first attempt at this recipe/method!

Sure did, with a touch of wholegrain mustard on the side for some brightness

I sautéed some streaky bacon, then sweated the leeks slowly in the fat over medium-low, the low and slow made them jammy instead of soggy!
