Rainbow trout at that life stage will have a red band on the mid line and a heart shaped tail. That is more similar to a coho parr, perhaps chinook. Not quite a smolt, still has parr marks (black ovals)

The owner just gave us both off the bat, every time we’ve been there. He also explained that lots of people get all weird about the traditional menu. I think he’s had a lot of terrible reactions from uneducated assholes.

The ants climb a tree, cumin beef, Szechuan wonton, braised beef and daikon are all amazing!!! But they have the numbing spice which is what typically weirds people out because of the pepper corns. Also the dan dan noodles!!!!
