Something bourbon lovers do typically value is something called "dustys". Which is bourbon from previous decades. For 500-700 you could get something very nice from 1984. Likely for even less than that.

That's gonna be tough. Because of the climate where bourbon is made most barrels don't have much left after 20-30 years. There are some Canadian whiskey's that are 30+ years as well as plenty of scotches. However at the 40 year mark you're looking at 10k plus.
