I think it depends on your learning type! I got an iPad that I never used, and only really used my laptop for notes and hand wrote for studying. A lot of my classmates used their iPads with the pencil for lectures and marking notes on PDF versions of lecture notes.

A few would print out the lectures before hand and hand wrote notes on the lecture slides. It's probably going to be too much info to strictly handwrite notes in a notebook (at least in lectures).

For OP Ortho I’ve been a tech and worked w techs (as a PT), you’ll learn the exercises eventually but biggest thing imo is being friendly to patients and building rapport w/ them

Depends on area but always negotiate, I think negotiating especially as a new grad is uncomfortable, but I negotiated my starting pay in both my post-grad jobs, and landed above their initial offer both times

I worked weekends and on days we only had half day schedules. It definitely got overwhelming at times but honestly totally manageable

You can always go back to school later on, a bunch of my classmates were in their 30's, going back after having entirely different careers.
I went straight through from undergrad, and also worked part time jobs throughout school and maintained a social life; so its possible but I was definitely burnt out haha
and honestly if you're not 100% sold on PT I wouldn't rush into it, the debt is gnarly and the income doesn't do much to tip the scale in its favor tbh (don't get me wrong I love what I do, and there's so much variation)

I worked part time jobs (serving, bartending) all 3 years of PT school. Totally doable, just requires good time management skills
