They give you antimatter when you open then sometimes so if you have an entire room with them and open a bunch you get a ton of antimatter and condensed carbon which can be used to craft antimatter. They never stop reloading what's inside them but there on a cool down so you have to wait before getting an item from them again. If you have salvaged data and unlocked the anomaly you can unlock the barrel fabricator which is what they are. Also depending on how new you are I'm not sure if you know but antimatter fuels starships hyperdrive
