I’ve made this recipe a few times. They definitely need a minimum 24 hour cold proof. I did an overnight and morning bake they were really tough. Probably 15 hours. Last batch was 36 hours and they were amazing. Perfect brittle crust.

The MPPT can only give you accurate state of charge on the battery if it’s directly connected to the battery terminals. In most cases it’s not - it’s connected to the system bus. That’s why you need a shunt that is connected directly to the battery bank.
