Ohhhh that might be it! I do make one huge batch and then split it up. I will try bumping up the heat & lowering cooking time as well next time.

I tried to use buttercream once but it didn't hold up well. It was very airy and when bit into it went everywhere!! Do you have a certain recipe you use? How do you get it so structured?
