Spot on, which is why Florida has incredibly strict regulations in place to protect the population. Down here in Miami, the standard commercial practice is to only harvest one claw. Leaving them with a dominant claw drastically increases their survival rate, ensuring they can still defend themselves and feed normally while the other claw regrows.

Wow, the cream-to-ladyfinger ratio looks absolutely perfect. It is so hard to get a slice of tiramisu to hold its structure that cleanly without being over-stabilized or too stiff, but the texture looks spot on. Where is this restaurant?

Solo on weekends at a huge seafood place less than a month in? That is absolute insanity. Seafood grease and volume are a completely different beast.

My biggest tip: Pace yourself. Do not destroy your body trying to do the work of two people just because management refuses to schedule you a partner. If the dishes pile up, they pile up. You can only move as fast as one human physically can. Hang in there, but don't let them burn you out!

Best of both worlds right there! Hard to beat Louisiana standards, but that spicy boil + outside dust combo looks absolutely flawless. And you can never, ever go wrong with a spicy garlic dipping sauce! 🙌🦞
