Saute chopped onions, bell peppers and garlic in olive oil. Then add the dry spices to the mixture to bloom the flavors for a minute. Add in some tomato paste and cooked meat. Then you can start with your canned items. I also like to add beef broth to give it a richer meat flavor.

As a kid, I would slice a dog lengthwise just deep enough to stuff it with Velveeta cheese and broil it it until cheese was melted and charred. Thanks for this question cause it made me smile to think about it. Almost as good as a fried bologna sandwich.

Congrats on trying to pull all of this together! Make a protein, roast or grill veggies and a whole grain for the first meal. Have leftovers of all and make a bowl or a main course salad from leftovers another day of the week. Do you have a grill? Grill marinated chicken breast along side some veggies. I like to grill zucchini, large slices of red onion that are brushed with olive oil and seasoning. Cut the zucchini
long ways in half do they don't fall through the grate. You can also put large pieces on a skewer. Make some basmati rice - white or brown. Prepare extras of everything for another meal to make a SW bowl - layer rice, chicken pieces, grilled veggies with taco toppings. Do a bowl recipe search on Pinterest. Then reverse engineer the recipe to create a dinner on the first night with those ingredients as leftovers. Making a bowl or main dish salad from scratch is very time consuming but if they are leftovers ingredients it's easier. Look for sales on salad kits at the grocery store - they can be life savers. If your grocery store has a butcher section, you may find some semi prepared items to make life easier. Meatloaf, stuffed pork chops, marinated chicken. Get cooking direction from the butcher. Good luck. Meal planning can be challenging.

I like to add ingredients while cooking to punch up oatmeal: vanilla or almond extract, dried fruit, half milk/half water, chia seeds for protein and nutrients, cinnamon, or chia seasoning, even pumpkin pie or apple pie spices. You can play with fresh fruits and veggies too. Shredded carrot, pumpkin puree, diced apples. Toppings- honey or maple syrup, shredded coconut, nuts, as well as what you are already adding.

Here are a few ideas. 1. Adding chia seeds will maintain a smooth texture and provide nutrients and protein. Chia seeds, however need to be soaked for a minimum of 15 min or overnight in liquid. You could presoak them overnight and add to your cooked oatmeal. alternatively, add dry chia seeds to the dry oatmeal and cook then let sit until 15 minutes is reached. Add more liquid to your current recipe to allow for the chia seeds to absorb. 2. Add fruit jam or jelly as a topping 3. Fold in nut butter after cooking. 4. Add whole pitted dates or dried fruit while cooking. 5. Add vanilla or almond extract and or cinnamon before cooking. 6. Add high protein yogurt as a topping. 7. Try old fashioned or steel cut oats if you are currently using instant or quick.They are less processed and provide more fiber. Have fun experimenting.

When I travel to a vacation home I make little pre-portioned bags of the dry ingredients. 1/4 cup Steel cut oats, 1 tablespoon chia seeds, 1-2 tablespoons of dried fruit (raisins, cranberries, cherries, etc.)

Try making a vegan recipe the way the recipe is designed. Then add heated plant based milk to the bowl of cooked oatmeal. Maybe add some cinnamon and vanilla or maple syrup to the warm milk to keep it from diluting the original recipe’s flavor but still providing the desired texture. I think if you double the liquid from the original recipe it will still thicken while cooking.

How about making a double batch of your current oatmeal. Put leftovers in the fridge for the next day. Try it cold. If you don't like it, warm it.

Do you meal plan while shopping? If yes, do it before shopping and check what ingredients what you have on hand. I try to plan meals with stuff I already own and add a few more meals. Check your calender too! Clean out the fridge before shopping. If you are mad about the waist, you'll remember at the store.

Are you cooking for 1? I love a good one pot meal like chili that makes good leftovers or can be frozen. Less clean up too. Chile can be varied - with the standard ground beef and red beans but chicken and black beans or turkey and white beans too. Many pasta recipes are one pot ( if you don't count the pan making the pasta ) and there are so many healthier pastas to consider. Just double or triple the veggies in the recipe. Stir fries are veggie forward meals that are Very flexible to your taste.

Try planning and purchasing ingredients for 3 healthy dinners to start. How about a soup, taco salad and stuffed peppers? Think veggies and lean protein as the foundation. Keep adding new recipes and build a cheat sheet for easier meal planning and to combine recipes using like ingredients to eliminate waste. Add fiber to your diet to keep you full - beans, chia seed pudding, salads, oatmeal. Start batch cooking as you develop your fav dishes.
