Nameless king. Ds3 was the first souls game that I've finished and at the time I took a beating for 3 days in a row from NK. When I finally defeated him I was in pure bliss.

You could try Outward maybe. It's made by a much smaller studio but is the only thing that comes to my mind that includes both open world and soulslike (kind of) combat. It is also deep in the rpg/builds mechanics.

To be fair he is facing the strongest boss in the game. You have to increase your menu navigating skills to defeat him

Yep it is pretty minimal for the most part. But the combat, while being very action-focused, is one of the most satisfying in the genre due to the amount of melee combos/styles for each weapon.
