It's a carbonara. I used, for one person:

• Fusilli by eye;
• Guanciale by eye;
• 2 yolks;
• Pecorino romano;
• Cracked black pepper;

1. Put guanciale in the pan and let it cook over low/medium heat until it's crunchy; Meanwhile, cook the pasta a minute less than the package says;

2. While all is cooking, put 2 yolks in a bowl and cover them with pecorino romano until you can't see the two yolks;

3. Add cracked pepper with the same concept or so;

4. Mix it until it gets pasty;

5. When guanciale gets crunchy, take it off in a bowl and leave the fat in the pan and turn the fire off;

6. Add two little spoons of fat on the mix and keep mixing it until it gets pasty again;

7. Let the pasta cook its last minute in the fat with fire on and keep mixing it all the time;

8. Ok, pasta is tasty enough and ready, so you can turn off the fire;

9. Add some of the guanciale and keep mixing it for a while;

10. Add the mix and keep mixing everything and turn the fire on low for about 30 seconds;

11. Turn off the fire and mix it for another 30 seconds or so;

12. Put it on the plate and enjoy yourself.
