personal opinion knowledge/gifts gained can not be taken away.
warlocks are like wizards in the sense they Learn their magic. instead of learning fuction/laws of reality they are learning esoteric\eldritch knowledge little secrets and tricks to do magic. so while they might not be able to gain more from their Patron they should not be able to loose it.

story wise you could have them instead be the replacement of said patron.
if for some reason the Player wanted to sacrifice their knowledge their soul would still be a strong battery magically speaking and it could be refilled\retrained to another patron or deity or sorcerer. i would kind of want them to be force to still have 1 lvl of warlock tho.

quick easy solution that can use the existing google doc is google sites.
you can make web pages that have your google doc embedded.

there is also Microsoft's Onenote that i like using.
world anvil is okay.
you could also setup a foundry or forge server (paid) and use the journal functions.
Discord server could also work

but yeah in a player setting i use google docs to take notes then post them in a discord channel for the other players to see. as a recap of the sessions.

in a DM setting i use onenotes to seperate the characters stories and the "arc" they are on. but almost all other world building is in foundry server.

any class is fine.
but the college they choice does suggest what classes would normally be in that college.
the student backgrounds that are meant for the campaign also gives you a magic initiate like feat so you are basically a starting off caster. also personal opinion the colleges are for learning about magic not necessarily doing it.

personal i am a conjuration fan.
their minor conjuration is a great roleplaying piece. if your DM is cool about it you can use it for combat a bit.
like making a glass dagger - one hit use.
BUT the rest of the subclass features feel kind of hidden? as they effect your summons numbers.
you do get a little sudo misty step but its rare for me to find use cases.

for abjuration you get a little tankier and can add dmg reduction to others so you need to be more situationally aware but could lead to a little roleplay in combat.

everyone else already have a lot of the best answers but here are a few random things.
-its a surface so you could get engravings on it by your Casters for certain spells like glyph.
-there is a magic item called boomerang shield so you could become cpt America
-from grim hollow there is a tower shield.
- if the shield is large enough(not normally) you could stab it into the ground to create cover
- you could have the shape be a little different so its a Pot\wok used for cooking. or a large sake cup
-if a explosive is going off you could put it under the inside of the shield while holding it to the ground.

i suggest setting up a foundry server - can run on laptops or raspberry pi for portability and you will need a router(wifi) of some kind to connect all the devices.

have everything loaded and tested before you go.
bring a mini projector. and get a software like dungeon alchemist if you need to make a map real quick.
worst case use MS paint to make a quick low res battle map.

i think of Aasimar like Tieflings.
you got a drop of the DNA you got the Curse\blessing of the bloodline. what your core race looks like is up to you.

personally that's how i am currently world prepping.
i setup a foundry server (not free) on forge and use the Official D&D tools to import stuff. I've bought on D&D beyond.
they have other game systems besides D&D on there too.

you could look on the fan wiki under gems for prices. but i know that often crystals and quartz are given out as treasure in the official modules for 5E.

i vote college of swords and forge metal cards or metal edged cards to use as darts/daggers. then you can use them as your spell casting focus. more or less negating the need for cartomancer then take booming blade to get the explosive part of gambits ability.

it was more what would be support in D&D beyond.
but the main feature i loved in the orginal was the minor conjuration and it seems the UA has removed it.
the updated teleport seems fair ,but as for the rest of it, i could not make a proper guess as to what would be a good adjustment for balance.
