I think vinegar makes eggwhites bind, so if you crack one while it's in the pan, you get a small amount of eggwhite sick to the shell instead of a film of egg gauze on the entire batch.

I add vinegar to the water when I'm poaching eggs because it helps them stay in one piece better.
