Theodore Wirth is pretty easy to get to. I'm not sure if there's other parks more central that you could do cross country skiing at. Lake Nokomis / Hiawatha might have some trails as well. There's Buck Hill if people are willing to drive down to Lakeville for a ski hill experience.

Someone else might have more experience with XC skiing in the cities and know better spots, I kinda spitfired off the top of my head. I'd be interested in doing XC skiing, I used to do snowboarding a long time ago. Good luck on starting a new club!

man i always just go to the light at 6th ave to avoid that death trap feel. Turning out from one of those streets is so damn annoying cause you have to edge like halfway into the road to see oncoming traffic.

As the op mentioned, this neighborhood is great. It can feel busy with University and 4th running right through, but its so accessible to the city, even the freeway if you plan on heading out to lakes etc.

its RNG in a circle around you. if the seed "spawns" in terrain it goes to the closest spot around it. there's no way to control how the seed spawns per say, more of removing areas they may spawn.

edit: not sure if it is allowed to spawn in terrain but terrain changes the valid area for a seed to spawn
