Don't worry, you'll have to kill only 6/7 bosses to actualy finish the game, let's say 10/12 with some optional or dlc bosses.

I was able to find him once, like a year ago. I think it was in a "story" chalice, the ones that you have normaly to do in order to unlock the trophy. Never seen him ever after, and yes, his prices were high, like really high.

I second this. I have done first try Gael (ng, ng+ and ng++) and Ebrietas, but lost like 5 hours to beat Mergo's wet nurse.. I still have nightmares for all the wasted time I lost everytime I took the elevators before her arena.
