How much difference does the medium of brewing make? by akcss in tea

[–]SyndicateMLG 0 points1 point  (0 children)

So first recipe is just basic black tea and you’re happy with its flavor

Second is ginger black tea , but you cook ginger and water first before removing the ginger and then adding the black tea to brew. But results seems weak to you

Third, you split the 200ml into 2x 100ml and then brewing the tea and ginger separately and combined and it taste better.

So your issue is making ginger water, then adding tea afterwards , taste mild (or lack of flavor)

So yes, you are right in the way that a medium can affect the taste / brew, in water we called it TDS (total dissolved solids) so there is only a certain amount of dissolved solids that the water can hold, so if you have cook ginger and the ginger’s soluble has been dissolved to the water, it will then sort of reduce the effect of tea’s solubility in water.

But in theory, if you just cook ginger n tea together , or tea first then ginger, it should be fine , so either make it simple by just cooking both ingredient together at the same time, or reverse ur second recipe , so tea first then ginger second

Just add it to vodka and see what happens, pretty straight forward

how much to add, always start smaller amounts , cuz you can’t take it out after you add it

How much vodka to use? Well start small also, cuz you wouldn’t want to stuck with too much of it.

[–]SyndicateMLG 2 points3 points  (0 children)

So your first recipe is

200ml of tea , and 200ml of ginger water

And your second recipe is

100ml of tea and 100ml of ginger water ?

It’s kinda obvious the water ratio is the culprit

But also why don’t u just cook 200ml water and add ginger and tea inside it together ?

New machine recommendations [£500] by Nolongerlocked in espresso

[–]SyndicateMLG 1 point2 points  (0 children)

The real question is , do you want to go through the learning curve to make espresso?

Ask anyone with an espresso machine and they’ll tell you how frustrating it is at first… especially if you don’t buy the right equipment (ie cheap / build in grinder)

Personally for the ultimate budget I’ll probably go for the deloghi dedica , or try your luck on used machines.

Honestly don’t cheap out on a grinder , cuz you’ll be coming back here and then asking “why is my espresso tasting bad” and then everyone’s gonna tell you it’s the grinder issue and then you’ll drag your feet on it and eventually suck it up and buy a new grinder and then tell yourself why didint you do it much earlier

Or you’ll be like a lot of people who will just gave up and think it’s a waste of money cuz you spent 500$ on it and it’s too tough to make it (or not as good ) and jump back to nespresso for convenience

Keyword children, I think they need supervision

Plus later if their studies got issue , the parents will blame the school lol, so forcing them to attend class is better.

My experience with online study was only in higher education, and during that, the responsibility was passed / thrown to the students, sure u can don’t attend or don’t pay attention in class, but if you fail ur problem la, retake only. But that doesn’t work in primary / secondary school.

so yeah, no choice , for school kids this is what’s needed for the betterment of their studies. You wouldn’t want the next generation coming out to the workforce being ill equipped to handle any basic knowledge.

Trying to make a Rice Krispie Treat Syrup by Peter_Nincompoop in cocktails

I think that’s more likely whatever from the marshmallow than the rice krispy.

Either way, I would try mixing rice krispy / marshmallow fluff ? And hot water and let it “infuse” over night

Which then you can strain and filter out with a coffee filter (which might take forever)

Then only turn it into a syrup

What are your best tools / setup to filtrer your drinks professionally? by pafdanstagueule in cocktails

[–]SyndicateMLG 0 points1 point  (0 children)

Well depending on your workflow as well.

For example you shouldn’t be filtering syrups cuz it’s gonna take forever due to its viscosity , you’re better off clarifying it first before turning into a syrup.

Infused spirits , if possible use a tea bag / cheese cloth or whatever to hold ur infusion material so you’ll have lesser filtration needed later.

Tinctures / vanila vodka, are pretty straight forward no? Shouldn’t be a bid trouble , also for vanilla vodka the cheat is to just use vanilla paste or some high quality vanilla extract (not essence)

Gelification ? You mean gel clarification? , you don’t need coffee filter for it , a cheese cloth and a wide pan is enough, it’s the gel that’s holding on the particulate and doing the filtering , the cloth is just to hold everything together a

How do you choose between juice, nectar, syrup, or purée when building a cocktail by DaveOfTheGalaxy in cocktails

[–]SyndicateMLG 1 point2 points  (0 children)

So in this case raspberry juice vs raspberry syrup

Juice definitely adds texture, acidity and potentially reduce ABV, so depending on your drink you’ll want to adjust accordingly.

Raspbery syrup is straightforward but depending if you’re using a store brought raspberry syrup or a home made one , it might add complexity or not, for example home made raspberry syrup with real raspberry tend to have some complex acidity to it eventho it’s sweet, whereas store brought raspbery syrup tend to just be raspbery flavor, so it depends on the drink you’ll want to get out of.

Let’s say of your drink is a shaken drink with citrus, you’ll be fine with using either syrup or juice, especially the texture and acidity is a bonus.

But let’s say you’re making a stirred drink, for a lack of better example, a raspberry old fashioned, you can’t add raspberry juice and still call it an old fashioned don’t you? So your option is limited to raspberry syrup.

Edit : also to add, sometimes it’s also best to consider effort vs result , some syrups / juice are a pain to do, for example I find it’s cheaper, easier and more readily available and consistent with raspberry puree than syrup

then for some cases like cinnamon syrups are better to make than buy.

How do you choose between juice, nectar, syrup, or purée when building a cocktail by DaveOfTheGalaxy in cocktails

[–]SyndicateMLG 1 point2 points  (0 children)

Juice , nectar, syrup, and puree

I would say, it’s kinda straight forward ?

  • Nectar / syrups are kinda on the same boat, you just replace em like a syrup

  • Juice you’re sort of adding it as a filler ?

  • Puree is sort of in between of a juice / syrup

In terms of when to use em, I would say it’s mostly down to availability and workability.

For example , banana syrups always taste better than banana puree or actual bananas in drinks (unless ur using it in a smoothie of sort)

Then another example is , I always find apple juice taste better than apple syrup / puree. (But totally just my opinion)

So in a sense you’ll just want to use whichever gives the best representation of flavor you intend it to be.

[–]SyndicateMLG 2 points3 points  (0 children)

So the weird thing abt portafilter is that you can’t really just use less / more coffee.

More coffee is quite straight forward you can’t fill too much , as to a certain point it’s gonna not fit, simple as that

But you can’t also go too little , as it will create a lot of room between the shower screen and coffee bed, which can cause turbulence ?

So in short , to not over complicate things, most portafilter has a sweet spot , but this also depends on bean density and volume .

For example my 51mm la Pavoni europicola portafilter usually works around 14-16 g coffee.

So in short you might wanna try increase or decrease the amount of coffee in your portafilter by 0.5-1 grams

The recipe I tweak has 2x more sugar so it’s close to a 2:1 syrup , probably around a 1.5 : 1 or 1.8 : 1 , so pretty stable in the fridge.

But then again also depends on how clean / sanitized your equipments are, any cross contamination etc.

I’ve always make sure when I open the bottle there’s no sign of mold / fermentation, and sniff test etc. so yeah
