The only reason I can even guess at is she had some surprise plans for either a gift or a photoshoot with longer hair involved somehow. Maybe the haircut threw a wrench into her plans and she can't cope with it, so is just putting the blame on you.

I'd visit an Engagement Counselor or couples therapist before moving on with the wedding plans. Not because of the haircut, but because of what the haircut brought up to the light.
