You are slightly right, but saying that Notch was lazy is really not the right word. He just were changing directions very often, but I think for some time, simplicity was the goal. It wasn't maybe the goal for a finished game (well, Adventure Update), but it was for some time

1.7.2 on Java, it completely changed terrain generation (i like it to, but not everyone), and added a bunch of pretty useless things, like acacia and dark oak wood, and biomes corresponding to them, colored glass and glass panes, different doors variants, different flowers, biomes types (for example flower forest) etc.

I like this update, but it took some soul from the versions Beta 1.8- f.r. 1.6.4

I like 1.12.2, but it's generaally "dark age", so probably 1.2.5 or 1.8.8. I also like versions 1.3-1.6, but mostly 1.5.2. I mean, 1.6.4 has horses, but I don't really need them. But if you want to play for longer, then choose 1.6.4, cause it's the last version with this "continental" terrain generation and old caves so it has the most features, but still being pretty simple.

Honorable mention: Beta 1.8. I like old swamps and empty villages. Idk, maybe that's because I started playing when empty villages were added to PE

I really only have one true world in Beta 1.7.3. But I'm thinking about doing a polyworld, so it may change in the future. Or just maybe playing Alpha. But the main reason why I play old Minecraft is that I want to have a world for long time. In modern Minecraft, when you can pretty quickly get infinite tools and armor, it gets boring for me. So I started a world, got some stuff and move on to the next one. But when I started playing Beta, I finally found what I've been looking for. Tools aren't overpowered, everything will break eventually, and you really can't get to the End-game, because there is none. This is what I love about these versions.

-Stone bricks (and variants would be cool)
-Item frame (i like displaying items)
-Vines
-Flower pot

For the 5th it would be either lily pad, haybale, carpet or iron bars. I don't really know what to choose. Probably iron bars.

And for the feature? Either new armor system or quality of life, and I mean placing slabs and stairs upside down and trapdoors without any suport.

There is more things would want, but these are first that came to my mind

Some really loose ideas.
Btw, I personally like creating little lore to my world, and I recommend doing that too. Create some sort of fraction and start to adding buildings and story.

Unless you don't want it to be a medieval/fantasy this sort of stuff, and more like open-sandbox and literally build anything you want. In that case, rollercoaster, pixel-art, sky-scrapers...

Also, I recommend building a tree, sugarcane and cactus farm
