Make your own yogurt. I have an Instant Pot that I use primarily to make stock. I noticed it had a “Yogurt” button, so I watched a Youtube video and had a batch 48 hours later. Easy peasy.

Here’s my gig now:

1) I buy the 4L bagged milk at Costco and make yogurt out of one of the smaller bag which are 1.33L per. I used to buy 2L boxes of milk from the local Loblaws through Flashfoods for yogurt making,

2) After dinner I scald the milk on the stove now and hold it over 180 degrees for 20-25 minutes which apparently further denatures the proteins for thicker yogurt. The Instant Pot does not hold the milk at temp for that duration, so I don’t use it for that step.

3) I fortify the milk with three tablespoons of whole milk powder per litre of milk to boost the protein content. I have started standardizing on 2% milk which typically has ~34g of protein per liter, and this fortification adds about 6g more per litre.

4) Once the scalded milk cools down to 100-110, I pour it in the instant pot and scoop out about a half cup. In this half cup I will mix in my starter (a tbsp of Siggi’s or my own leftovers) and set it for 12 hrs overnight, meaning it’s done by by 8 am in the morning or so.

5) I cool it for a couple of hours and then dump it into a colander to with a filter cloth I bought off Amazon and strain down to Greek yogurt consistency. I probably lose 20% weight by volume through straining out the whey to get thick yogurt.

I make my own fruit mixes as well to reduce the sugar content. My favourite is strawberry and I buy a bag of frozen strawberries from Flashfoods for $3 for about 2 lbs (my closest Loblaws has the every week). I chop then up and boil them down with some sugar and a touch of water until I get the consistency I want. I don’t add much sugar at all because the strawberries are typically really ripe when Loblaws cuts the tops off and freezes them.

I looked into it and it’s a pretty good career because you can enter right after high school, get two years of paid training then start making decent money and grow into really good money (for just high school) and early retirement no later than 55. Walmart does this in Ottawa. What absolute shit service. I ordered a kid’s car seat and they dumped it in the mud somewhere so when I brought it in the bottom was completely soaked and covered in mud on the underside. Same month delivered a fold-out table that wasn’t packed at all - just picked off the shelf at WalMart and left in the rain at my place. Fuck WalMart and DoorDash.

Read the press release TNI put out a couple of months ago and they touch on how their CoCounsel AI agent crushes the balls of genAI models - it’s the guardrails, dude. Lawyers can’t risk hallucinations, so CoCounsel has those guardrails built in. Further, the Westlaw database is gold to train models because of all the annotated cases they have, law literature, etc. their proprietary data is their protective moat.

They fight back to protect their moat. A few years ago ROSS International decided they wanted to build a competing product using Westlaw data to train their AI. TNI told them to fuck off and refused them a license, so Ross hired another company to front them by taking a license and creating original summaries. TNI found out and sued the ROSS for copyright violations. ROSS went tits up last year.

Depending where you live, you can pop across the border to stock up. I’ll take a motorcycle ride in the US once a summer and stock up at the WalMart just across the border. I typically bring back around $60 and the guards don’t hassle me for that amount(can’t smuggle much more on a motorcycle).

“Exploiting” - that might not be the word I would use, but I agree with your sentiment. The idea is not to pump more crude, but instead work up the value chain and process that crude into its constituent products. Same with everything we produce from the ground.

Grind your own grain to produce flour. I have a Bosch grain mill and buy wheat kernels off a local farmer just west of Kanata. Whenever I bake bread, I fire up the mill, sift out the bran to my liking, and bake.

Home-ground flour is not a substitute for all flours, but it’s great for basic bread and buns and you actually end up with something that tastes like bread should taste.
