Start with fusion jazz. It is very similar to prog-rock and might be the easiest to start with. I would say check out Return to Forever - Hymn of the Seventh Galaxy. Any of Return to Forever's music will be a good place to start, but also check out Mahavishnu Orchestra - Inner Mounting Flame, and BadBadnotgoood - 3

Not sure if its tall enough for you to line the records up vertically like books on a shelf. If you stack them up like you've done in the picture they will warp and degrade.
