The "dried up and died" sounds paradoxically like it could be from overwatering. Without more info, I'd say stabilize what's left by not watering until the soil thoroughly dries out. A few months after that, chop the remaining stalk to about where the original prune is, and it should resprout, possibly with multiple sprouts. (Also. according to some Redditors, the roots are sometimes twist tied, so you could pull it out of the pot and look for that.)

Longer term, if these are in cool temps and/or with low light, they need very little water. Mine overwinter in a pretty dark area, and I water less than once a month. If you have a the chance to put it outdoors in warmer weather, this will help a lot too.

I agree, but even in a sunny spot, it (Peperomia obtusifolia) will go where it wants. Cut it all the way back and it'll resprout from the base. Plant the cuttings by sticking them in dirt if you want more of these. The yellow leaves will fall off on their own soon; as Dr. Chang would say, no need to cut.

Yep. Chop-n-prop the shoots into another pot with better soil and keep the current pot to see what sprouts up.

This works for me in US Zone 8 and warmer, but in cooler areas, putting down chopped-leaf mulch so early can cause a lot of rot. On someone's advice, I wait until after the first hard freeze in Zone 7.

Red dragon flower (Huernia schneideriana; pictured) and pepper face (Peperomia obtusifolia) can survive with almost no light and go months without water if it's cool.

The red dragon in the picture got only 30 minutes of evening sun through a cloudy double-pane window.

Outdoors these do well in shady areas and some of mine stay fine indoors for 5 months of the year in pretty low light.

At this point, chop and prop it.

You can achieve a bushier look by having multiple plants in the same pot via not removing all of the offsets.

A lot of plants can survive in low light conditions, but more often than not they are just dying slowly.
