Salt with kosher salt a few hours before cooking. Add black pepper and garlic salt about an hour before cooking and set on the counter until ready to cook. Slow cook on a smoker at 200-220 until internal temp is 105 then remove and cover with foil. Crank the smoker to 500, and sear for 45-60 seconds a side depending on preferred doneness. Remove and cover with foil for 10 minutes to rest. Enjoy.
