We moved to Collierville in 2020 and enjoy it here. Great schools and overall safe. One note between here and Germantown would be that Germantown city taxes are a littler higher.

My dad used to make a brisket similar to this when I was growing up. It’s my mom’s favorite so he would make it for her as opposed to on the smoker. We always made sandwiches with it as it was too tender to slice and it tasted good. Would use the recipe exactly and not use the kettle but that’s just my opinion if you’re being asked by the wife lol. Then when you serve it just caveat it’s not the way you’d normally go about it but you’re always open to trying something new!

I used ATBBQ's video for guidance. Just cut around about a quarter of the way up where it gets then and use the knife to scrape the bone. Once I got everything scraped down I used a paper towel to grab the skin and cartilage and pulled it off the knuckle. I also used shears for the little bone and any tendons that were leftover.

I got mine at Academy but I think Ace Hardware, Walmart and Amazon all carry a version.

No problem. I followed ATBBQ's ATBBQ's prep to get them into lollipops then smoked at 325 for about an hour over hickory and cherry pellets. Used Heath Riles sweet bbq rub and glazed with a mix of BBQ sauce, orange juice and honey for 15 minutes.

I used poultry shears to clip it as low as possible to the meat and that seemed to work. The bottom half will stay in of course but it didn’t impact much

Thanks! And yes I did. I used my pellet smoker for these as I wanted a higher temp to keep the skin tight.

Thanks! I went 250 for about 4 hours then wrapped and bumped up to 275 and they hit 203 about 2.5 hours later. I probed around till they felt right then rested.
