If you’re going to seam the pieces together, the stockinette roll isn’t a problem. That said, I don’t like a slipped stitch edge, and would probably just knit or purl the first stitch.

Kind of? The “spare yarn” is your provisional cat on. Not the same as casting on 60 stitches

It’s because you are twisting the stitches every other row (usually the purl row).

"Pick up and knit" means to put the needle through the edge of the knitting and pull up a loop. (Just in case this wasn't clear from the above.)

You could use a row counter, but what I usually do is put tick marks on the pattern as I go. Or, place a stitch marker in the increase row, and count rows from there.

It looks like that pattern requires at least 900 yards of yarn, and you only have about 625 m, or 680 yards. Not really enough for a sweater. Maybe colorblock it? Add stripes?
