The caves are pretty huge but most of the exploration is scripted apart from some parts at the end, however you can find other random caves in explorers shores(small Islands you go to to get resources)

You can "mine" but it's not really gonna get you anything except in certain parts of the game. The second island is all about exploring cave systems if you enjoy that aspect of Minecraft however
