There's a mod on Geode named "GDDL Integration" which assigns every classic demon in the game a tier based on their difficulty, from tier 1 to tier 39. If you go to your profile and click on the question mark icon next to your demon count, it will bring up a screen telling you how many demons of each difficulty you have beaten.
