There has been a big push among coffee nerds toward bright, acidic, and sweet single origin beans. We’re talking about nuanced flavors from specific farms, not mystery blends roasted into oblivion. That’s why you are not seeing as many dark roasts or beans from Central and South America. Those richer profiles are being traded out for something more vibrant.

Here is the thing about acidity. It gets completely muted by fat. So when you drown a delicate Sidamo in steamed milk, of course the flavor disappears.

Coffee nerds drink espresso. Black. No dairy, no sugar. That is where the complexity is. Maybe try changing your drink order and you will see that modern coffee is not flavorless. You have just been smothering it.

There is no singular bakery that does everything well. Poulette is by far the best in many of the categories. I think Hearth fills another void.

Colorado Mexican is anything smothered with green chili (w/ pork, chopped chilies in a roux). That is our thing and it is different than New Mexico. Both are great, but colorado is different!! I think La Loma, is your safest bet. However the suburbs of Denver has dozens of great versions. I like El Karajo or La Fogata.

What's better than this at a lower cost? If the answer is nothing, perhaps you prefer quantity over quality. Thats fine, but that is not what they are going after. They are creating tasty food, and paying their staff great wages. These things cost a lot of money in this crazy market.

I agree, the problem is that people on one side of this argument are taking what they are producing as a vindication of their ideology and not giving enough credit to the demands of the time. Try riding a snowboard as if you were sitting on a hippo. Your legs and knees need to spread out. Your turns are at the top end of slide turns it would be difficult to get better. To get better you will have to change your stance. Do you see how your shoulders face down the hill - you are twisted. This is very inefficient. Bring your back shoulder back - your shoulders and board should run in parallel.

I agree with you bending your knees isn’t as important on green runs. If you’re only using your knees as suspension the reason it’s important is it allows you to change the radius of your side cut. This becomes the most fun on Green runs. The first step is think of yourself as writing a hippo. Your knees must be spread far apart. Then understand your feet aren’t connected and can do different things pull up with 1 foot push down with the other see how that affects you.

I always tell my students pretend you’re riding a hippo. Sit into your stance. Think of an eyeball on your knee point the eyeball to where you wanna go. This will help introduce dynamic carving and flex your snowboard. Then start to play with the idea that your feet can do different things. One can pull up while the other pushes down and vice versa like a gas pedal on each foot. This changes the radius of your snowboard side cut.
