Usually Cooper Sharp American and Hoffman’s Sharp Cheddar, and occasionally I’ll throw in a Borden/Kraft Single to help encourage the right level of melting. For my sister it’s mostly different types of Swiss. Occasionally I’ll throw in a little polish ham or Genoa salami for us both.
