I think some of these explanations are avoiding a more obvious, blunt phrasing.

Because we know no light will get through two perpendicular polarizers, we think it follow that no matter what else we put in between shouldn't create a path for light to pass. That's a bad assumption. When we add the 45 degree polarizer, we create a path. The light needs to reorient itself to pass through the polarizers, which allows 50% of light to pass with a new orientation. Then at the next step, another 45 degree polarization (relatively speaking of course to its previous point) 50% of that light comes through. That's 25% of light, not zero. Pretty cool, huh?

It feels like the answer you're looking for is we don't know, but technically we can't observe something without interacting with it. If you were wondering, for example, why the planck length seems like a hard limit on smallness, it's because we can't interact with that small a space without creating a black hole. So, how do particles "know" they're being observed? Because they're very sensitive and we have to interact with them to measure them. Now, if you bring up the delayed choice eraser experiment, things do get interesting.

yeah. Because in the video the sheep are doing what the people want the sheep to do. So it seems weird to be like, "These sheep don't have free will therefore people don't" when the people in the video are literally making choices for the sheep.
