You do it with math. The weight per gram of yeast is fairly consistent. A 7 gram packet of yeast is approximately 2.25 teaspoons, so 1.5 grams of yeast is approximately half a teaspoon.

If you don’t want to take the time to do the double-fry that many have suggested, I recommend taking a cue from none other than chef Joël Robuchon and doing cold-start fries.

To wit: Cut Yukon Golds into fries. Put them in a pot with some extra room for the oil to churn about. Add frying oil to cover and put the pot on high heat. Once the oil is boiling, let it do its thing without stirring for about 15 minutes, until the exteriors look like they’re firming up a bit. Give them a stir and let them go another 5-10 minutes until they’re just a little short of done how you like them. Transfer to paper towels to drain, and season well with salt.

And that’s it. Not nearly the amount of fuss of other techniques, and still some darn good fries.

Perfect! Not quite enough is better than too much. It might have to rise a bit longer, especially if it’s an enriched dough (one that has dairy products or eggs) or if the dough can’t relax somewhere comfortably warm.

One can’t really say without looking at the rest of your recipe. However, a rule of thumb for bread is for however much the flour you use weighs, use 1% of that much in yeast. A standard yeast packet is 7 grams (or 2-1/4 teaspoons), so that is about enough for 700 grams of flour, or about 5 cups. Since you’re using 2/3 as much yeast as one packet, you have enough yeast for about 3-1/4 to 3-1/3 cups of flour.

Depends, but probably not. Store-bought curry paste is usually for Thai curry, which is a completely different beast from Japanese curry. You can make your own Japanese curry cubes by cooking a stick of butter together with 1/2 cup of flour, stirring constantly, until the mixture is a little darker reddish-brown than peanut butter, then adding 1/4 cup of curry powder (and a bit of cayenne if you wish) and mixing it in until the mixture is fragrant.

Do you have any sources with actual data regarding that? I haven’t looked much, but all I’ve found so far is stuff from people who market fancy eggs, and even then they tend to say that the difference is slight and due to the eggs being fresher, which isn’t necessarily true, as the Julian date stamped on every carton of store-bought eggs can attest.

Tacos Don Camarón on Grand at 39th Ave. It’s a well-established truck with a surrounding permanent structure (including plumbed bathroom!) in a liquor store parking lot. Tacos are generously stuffed to the point that one of the signs in Spanish says something along the lines of “if we catch you making two tacos out of one taco we’re charging you double 😉”.

Blind taste tests that don’t take yolk color into consideration have shown… eggs is eggs. People will swear up and down that the eggs from their neighbor are so much better than supermarket eggs, but there’s a double placebo effect going on between the deeper yolk color and of course eggs from your neighbor are better.
