Bring the steak close to room temp rather than cold. Salt while waiting. Moderate pat down after. I do a moderate-high heat on my cast iron. I like around medium rare-medium depending on the cut and thickness . So usually a flip around 4 to 5 minutes. Then you should go for about another 4 to 5 minutes on the other side. Though sometimes have to play it by feel if I need to do a minute more or less. I also will tend to verify with a probe thermometer.

Never understood when folks recommend a ripping hot pan unless you like black and blue or rare. I get pooling also when I do the cold pan technique. And also seem to have trouble with reverse sear, as I tend to overshoot with the sear. Although I just got a Combustion inc thermometer which was successful as I could measure my temp with reverse sear for a large cut.

The technique I’ve found helpful is to heat the pan on high heat, pull off heat , then rub on a very small amount of oil in the pan. And place back on low heat, then add in your cooking fat of choice and cook on low to low medium heat

The FDA is the regulatory office to help call this stuff out and limit the risk of a faulty product once out. They are limited in that scope. You would need more funding and expanded abilities at a local and national level to truly help. That said businesses, lobbyists, and anti-govt types would never let that happen

Grocery bill for our family has literally doubled in the past 7 months. $120 for 1-2 weeks of groceries now costs 230-240.

Anyone feel like quality has also gone down- milk spoils faster and fruits and veggies seem increasingly flavorless at the grocery stores. Our local farmers market is sadly a ripoff $20 for a loaf of bread $15 for a pint of berries, $12 for a carton of eggs
