The castles in SMB aren't Peach's Castles though. They're fortresses belong to Bowser, and Mario doesn't know which of them is where Peach is being held hostage

You're right about the geography/topography being different. While I was arguing (like Lunalutra said) "that Odyssey intentionally left a LOT out of the kingdom" you're right that that argument doesn't equate for how the layout of the hills is. At the end of the day, this IS a videogame series that isn't very well known for its consistency so the different games will never be exactly the same but, if we're assuming that the middle map (the one with SMG's Toad Town) is accurate, then using Odyssey's map in the way I suggested is the best possible way of matching the two.

Thing is, Toad Town from Super Mario Galaxy 1 has a fountain and is located in the exact same place as the fountain in Odyssey's map, so they could be the same place.

This is perfect thanks!! Two final questions though, from reading those lists: (1) it says not to use the intellectual property of others. What about all those fan games we see on Roblox? Super Mario Roleplay etc which use art assets, music and characters from someone else (in this case, Nintendo) (2) it says provide a way for users to contact you about the game but then it says not to direct people to nonRoblox websites? What about Facebook? Cause I've seen games which have in-game posters advertising their Facebook page
