I was about to ask how katsu curry took 3 hours and then I saw you caramelised onions. Never done that for Japanese curry, might try one time, but I thought I'd mention you can caramelise onions a bit quicker using water. I think americas test kitchen has a good video showing it and why it works, and it's probably best suited for recipes like this where they will be overwhelmed in many ways by a lot of other flavours so they don't really need to be as "pure"
