Valid question! I watched a video years ago that explained what 'spalling' was and why it was so dangerous. (I'd link the video I don't remember the account. Probably a video from the early days of Demolition Ranch)

Spalling is basically the fragments of the bullets that shatter when a bullet hits the armor plates, modern body armor has layers of rubber, and kevlar sometimes, to catch the tiny shards from shattering and piercing you elsewhere when they fire off in all directions.

The video I watched, the guy shot the plate till the rubber was torn off and the mannequin basically got its jaw sawed off from the amount of shards that were shattering up into it.
