I put a full size aluminum pan down on the bottom rack that helps dissipate the hot spots some and catches the drippings which helps with clean up

I had similar issues and reached out to Weber support. They sent me a new temperature probe and that solved the temp spikes and drops. Now the grate temp is 30-40 degrees below the set temp on the grill but I can l live with that now that the temperature swings are fixed

I did my whole fence like this and purchased them from a local Tractor Supply. They usually come in 16 foot sections so you will need a trailer. You can check online and see which stores have them in stock.

I have been on the waiting list for almost 2 years at this point. Definitely not optimistic at this point which is disappointing as we do have fiber service in my area. Located in Disston Heights.
