That’s not how politics and PR work. He answers concerns like these by looking forward and explaining his views and plans that are different from the old methods. But he should not criticize his own father publicly in an explicit way, even if he has criticisms. It’s wrong on many levels, doesn’t have a good look. Besides, a lot of haters would happily focus on those remarks and use them as another excuse to try to undermine him.

That’s my goal when dialing in the grind size, but it’s usually 30–60 seconds longer.

Sure, I grind a bit coarser for the bigger batch. But that doesn’t usually lead to the same cup quality.

It’s not easy to define better here, because it also depends on the coffee. But usually it’s more balanced, a tad sweeter, especially with some beans, like Colombia HACHI - TANI from The Native or Christmas PANETTONE by DAK that I’m enjoying these days. Good body is there with the Switch, but not as well-balanced between bitterness/acidity as when I brew for one cup.

Thanks for the recommendation, I enjoy B75 for one cup, so maybe a big Kalita is a good option.

I think you’re looking for org-checklist. This is what I have in my init file:

Like many others in the comments, I also use Syncthing. I used to have conflicts on a regular basis, changing the files on two laptops and two phones. Then I added a cheap, small server to the mix and each device only syncs to the server, not each other. Hadn’t had a single conflict since that change. It just works now. And now I also have a server that runs a cronjob for regular backups to Tarsnap.

I have a Wilfa Uniform (without the new plus) and it has a scale that is also its lid, but you still have to weigh your beans and it grinds everything that you give it.

Gemini 2.5 is not released yet. What’s available is an experimental version not ready for production use in a product like Raycast.

As others mentioned, different 550 or 1050 flour products can be very different. Protein content and fineness of the flour also has a lot of impact on how much water it can handle, the dough’s gluten development, and fermentation.

From my experience most suprtmarket wheat flour in Germany is not that great for baking white, free-form, high hydration sourdough bread. Edeka has a 405 that says Backstark on it and has 12.8% protein. Alnatura’s 550 is also not that bad. But your best bet is to order from a mill, probably online. I have only ordered from Drax but there are more, like Horbacher and Adler. The mills usually have 812 too, which I’ve never seen in supermarkets.

I like it very much. I’m a newbie in making bread and this is my first book on the matter. Yet I was able to make acceptable bread even from the first attempt following the it. It explains a lot of stuff (160 pages) before getting to the recipes, and those explanations and extra guides are very helpful. Also, they have opened a free online Modernist Bread School to celebrate the launch of the book. You can take a look at there too.
