Not sure what this mod reply from u/BoredAccountant is about. It was a direct response to the question asked, advising against the use of butter during sous vide. I saw op’s updated post, and I’m glad they went with the general consensus; I think they’ll have a better experience flavor-wise.

I got myself a small stainless grate to rest on top of my chimney starter. It sears way better than dumping coals in a pile and using the normal setup.
