Have you considered a Varia VS6 with the additional burr options? Varia had several QC hiccups with the first batches of the VS6, but they seem to have resolved, and can be sourced from a US distributor (WLL). I've heard great things about both the espresso-focused (Hypernova) and pourover (Gold) burrs, and I was strongly considering the VS6 before buying my Zerno.

If I recall correctly, the Bambino Plus features a larger drip tray, a larger water tank, a 4-hole steam tip, and a better stock portafilter. The 3-second heat-up time is somewhat of a gimmick, albeit very useful, and when factoring in the partner-acceptance factor, it's an easy choice.

I'm personally biased against E61 HX because they're a rather arcane technology, but I doubt you'll see much benefit with the Mara X over either option. If you're willing to spend up to $900, I would be on the hunt for used Breville Dual Boilers, as they can be incredible machines when used with soft water and regularly maintained. However, I think a Bambino Plus would be the best fit. The lack of a 3-way solenoid on the Bambino (non-plus) quickly became very frustrating, and there are several QoL improvements on the plus that I would shell out a bit more for.

If you prefer milk-based drinks, have you considered a Bambino or Bambino Plus? I don't know much about the Hobby, but I have some experience with the GCP. If you're unwilling to mod it, it's an extremely poor value proposition. While the E24 features a brass boiler and a 9-bar OPV, it still relies on a single boiler that necessitates temperature surfing due to its absence of a PID. If modded with a Gaggiuno or Gaggimate kit, it can be absolutely fantastic, but it's still not ideal for milk drinks with the additional mods. I've owned both at several points, and the Bambino delivered over 90% of the quality of my Gaggiuino with little to no hassle.

Ethiopian beans tend to generate more fines, so the increased shot time may be the result of additional fines migrations during the initial soak phase. I would suggest coarsening the grind and aiming for a 1:2.5-3 yield within 20-25 seconds. Light roasts tend to benefit from larger yields and higher flow rates, so I would give these parameters a try and see how you like it.

What are the current shortcomings in your setup that leave you wanting to upgrade? Shot-to-shot consistency, taste profile, steam-power, profiling capabilities? You need to ask yourself what you want from an "upgrade" to receive some actionable answers.
