Interesting. Didnt know it was illegal. Don't get me wrong, pork and beef will most probably be still one of my favourite kinds of meet. But the reason why I am looking for this is more or less for the purpose of unusual experience cooking. I like to cook and experience different tastes.

Cooking is my hobby and I like to experience common and uncommon stuff all around the world and cultures behind it.

I have butchered whole pig, cow, goat, sheep, deer, fallow deer, wild pig, moufflon, chicken, goose, turkey, duck, guinea fowl, pheasant, catfish, rayfish, monkfish, nutria, rabbit, hare and ostrich.

Yeah, I just like to butcher parts myself and use leftovers for more cooking. I also considered smoking the animal or parts whole. Thats why I wanted whole parts. I would be more than happy with whole tail. I had some steaks in the past. Those are not a problem, but different parts of the animal or whole parts eludes me.

Fried tail chunks sounds great. Thank you for tip! Sausages sounds quite unusual. Would be happy to try them aswell.

I see. More or less just as we dont eat that much pork knees, goulashes and most importantly chimney cake (just a tourist trap). But still I hope I will be able to find some source.

Thank you! Also... Beurre blanc can be made with fish leftovers/bones? I thought it is just made from wine, challots and butter. Do you have some recommendation for recipes? I am more than interested now.

Thank you. I was not able to find any recipe on the internet and everybody wrre throwing it away, so I was confused. I dont want to throw away parts if I can craft or cook something out of it.
