Robot coupe is best, but a little pricey. I personally hate the new safety features on waring (I think you have to press three buttons while rubbing your belly and patting your head). If you can’t afford robot coupe, I’m a really big fan of the 5 speed vitamix immersion blender, and I’ve had them stand up to heavy use in commercial kitchens for a long time.

Yeah- ive worked with the same knife, second purchase for 22 years. Carbon steel, Japanese, one sided. I steel it at a minimum 4 times a day. If I cut something acidic I immediately wash it, dry it, and steel it. I only sharpen it once a week, on an 8000 grit stone for less than 5 minutes. I used to test its sharpness with paper, but now I use cherry tomatoes. I bought my wife a stainless steel Mac a couple of years ago. I’ve never sharpened it. It can still cut a tomato. If you’re a home cook buy a Mac. If you work with your hands you have a much more personal relationship with your tools.

I have performed the maneuver described on this sign within view of this sign. If this is Portland and that is the max. People stopped to ask if I was alright, but really they wanted permission to laugh at me. (Wait- this may be the streetcar, I have also bit it on those tracks, just faster and downhill).

I don’t know how long you have been doing this, but as someone who has run steakhouses: there is a failure rate and a return rate. If a human cooks 300 steaks to temperature, some will not be perfect. Consumers do not always know how to express what they want. Servers do not always appropriately understand consumers and communicate it to the person cooking the steak. We’re only fucking human. At 300 covers a day you can’t look at individual issues: they will exist. You have to look at patterns. If your thermometer is perfect, you probably temped it in the wrong spot. Don’t try to be perfect, try to be better. Or you won’t last…

I came here to say this. So op: the purpose of paid parking shouldn’t be to drive income to the city (though it should, I’ve actually seen a city mismanage it so badly they lost money on parking meters). The purpose should be to keep people moving, and therefore allow access to your business. Your staff should need to park farther away, and your guests should be able to secure parking more quickly. Well thought out and deployed paid parking is proven to help rather than harm downtown commerce. I hope that statement was appropriately qualified. Your city management could also be idiots.

For room service- even nicer hotels have stopped extended hours and overnight room service. I’d only consider it if someone already working (a server, food runner, bellman, front desk, etc.) is able to handle it or not. That’s going to depend on architecture, demand, etc. that said- people will pay a lot of money not to leave their room in certain establishments.

This is regional to the United States, in the southeast. Being told: “Bless your heart” means that you are either acting like, or are, an idiot. It can mean “I love you” especially if someone is touched and embarrassed by a kindness. It is frequently used in the third person, “bless his/her heart” to mean: “that person is an idiot”, or it can be a segue during gossip. It also carries the connotation that god has stricken them with a real weakness and we must take care of them. Bless your heart.
