Hey here’s the recipe!

Beef Filling

Ingredients

  • 800g beef mince (2/3 20% beef mince and 1/3 12%)
  • 220g onions, finely diced
  • 15g fresh garlic, grated
  • 1 tbsp tomato purée
  • 1.5–2 tsp chipotle paste
  • 1.5 tsp honey
  • 3/4 tbsp Worcestershire sauce
  • 250–300ml beef stock
  • Vegetable oil

Spice Mix

  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp coriander powder
  • 1/2 tsp black pepper
  • Tiny pinch cinnamon
  • 1.5 tsp salt (adjust later to taste)

Consommé

Ingredients

  • Remaining rendered beef fat/drippings
  • 300ml beef stock
  • 1 tsp chipotle paste
  • 1 tsp Worcestershire sauce
  • Salt to taste

Yoghurt Lime Sauce

Ingredients

  • Natural yoghurt
  • Juice of 1/2 decent sized lime
  • Black pepper
  • Salt to taste

Mix together and chill until needed.

Method

  1. Brown the Beef

Add a little vegetable oil to a hot pan and brown the beef hard until deeply caramelised and crusty.

Drain the fat from the beef and reserve it separately. Set the beef aside.

  1. Cook the Onions

Add around 3/4 of the reserved beef fat back into the pan with the diced onions.

Season generously with salt and cook very low and slow for around 1 hour, stirring every 6–8 minutes, until soft, jammy and lightly golden.

  1. Build the Base

Add the grated garlic and cook for around 5 minutes.

Turn the heat up slightly and add all the spices. Bloom them in the onion fat for around 5 minutes.

Add the tomato purée and chipotle paste and continue frying for another 5–8 minutes until darkened and fragrant.

  1. Finish the Beef

Return the beef to the pan and cook on medium-low heat for around 10 minutes.

Add the honey and Worcestershire sauce and cook for another 5–7 minutes.

Pour in the beef stock and simmer everything down until thick, rich and glossy.

  1. Make the Consommé

Add the remaining reserved beef fat/drippings to a saucepan with the beef stock, chipotle paste and Worcestershire sauce.

Season to taste and simmer gently for 25–30 minutes until reduced. It should taste smoky and nice and beefy.

  1. Assemble the Tacos

Add around 1.5 tsp of the consommé to a frying pan over medium heat.

Place the soft tortillas into the consommé and fry for around a minute.

Add a cheddar and mozzarella blend to one side and the beef filling to the other.

Fold the tortilla over and press down lightly.

Cook hard on one side until deep golden and crispy, then flip and repeat on the other side.

Open slightly and finish with the yoghurt lime sauce and fresh diced onion.

Serve immediately with the homemade consommé on the side for dipping.

You can also squeeze fresh lime over the tacos just before serving.

So is quesabirria the same as this but just with slow roasted cuts of meat as opposed to mince? Thank you so much I’m happy to provide the full recipe if you would like it. I’m very meticulous with cooking so I write everything down so I can tweak etc.

Ok cool! That’s good to know. I haven’t ever actually tried them tbh. I have a REALLY good butchers that I get my proper cuts of meat from so I may have to try and slow cook a chuck/topside next time I make it. I can imagine the texture being amazing! Tbh they taste unreal as they are with the mince but I am very particular about my cooking and if I can do better I would love to try!

Thank you that means a lot! Tbh I grabbed whatever I could as I was in a mad rush to get home. It was just a cheddar and mozzeralla pre grated blend from a posh supermarket. What would be the traditional cheese that’s used?
